Cantucci

Makes 7-8 dozens

Ingredients

4 cups  all purpose unbleached flour
2 cups sugar
1 teaspoon baking powder
1 teaspoon baking soda
pinch of salt
3 large eggs
grated zest of 1 orange and 1 lemon
10 ½ tablespoons of butter, melted
1 ½ cups whole almonds



Place the flour in a mixing bowl with sugar, baking powder, baking soda and a pinch of salt. Mix and add the 3 eggs, orange and lemon peel, and butter. Mix well. Add the almonds and work them in
Roll out into 6 long rolls about 1 1/2 "/4 cm thick and space them out on 2 buttered baking sheets.
Preheat the oven to 375.
Bake for 15 minutes till barely golden..
Remove from the oven and separate the rolls
. Slice each roll into slices 1/2"/1"  thick. Turn these cut side down on the cookie sheets and bake 5 minutes, turn the cookies over and bake another 2 minutes.
Cool on a rack.
