Garbanzo bean and fava bean bread

Serves 8

2 1/3-cup Bob’s Red Mill garbanzo and fava flour
3 cups water
1/3 cup extra virgin olive oil plus extra for oiling the pan
1 tablespoon minced fresh rosemary
2 tablespoon minced red onion
1 teaspoon salt
freshly grated pepper

Begin the night before by mixing the flour with the water, stir well, cover and refrigerate overnight.
The next day, heat 1/3-cup extra virgin olive oil with the onion and rosemary, remove from heat and let cool slightly.
Rub some extra virgin olive oil in a cast iron skillet or other baking pan, place it in the oven to heat to 470 degrees
When the oven reaches 470 degrees, pour the seasoned olive oil in the flour mixture and pour everything in the skillet.
Bake for 20 minutes or till golden brown, if necessary, broil the last 2 minutes.
Remove from oven and let cool before cutting and removing from the skillet.
