Insalata di carote crude  
      Carrot salad


Serves 6

Ingredients:             

3 or 4 large carrots, washed, peeled, ends removed – zest and juice of 1 lemon – extra virgin olive oil -1 garlic clove, minced  - 2 tablespoons chopped Italian parsley – salt and pepper

Directions:

Grate carrots through the large holes of a cheese grater.
Place them in a bowl, add the lemon zest, half the lemon juice, some olive oil, salt and pepper and parsley. Taste and adjust the seasoning as necessary. Serve.
