Limoncello con limoni Meyer




12 medium size Meyer lemons, preferably organic
1 quart 100 proof vodka
6 cups water
2 ½ cups sugar

Wash and peel the lemons, taking care not to remove the white pith ( it’s bitter )
Put the lemon peel in a 2 quarts size glass jar with a tight fitting lid
Pour on it the vodka and close tightly.
Let stand in a dark and cool place for 1 week, shaking the jar several times each day.
Make the sugar syrup: in a saucepan combine sugar and water, bring to a gentle boil and turn off the heat. Stir until the sugar is completely dissolved.
Let it cool to room temperature.
Add the sugar syrup to the strained lemon infused vodka. Discard the peels
Close tightly and allow it to sit for a week or two
Pour it in decorative bottles and keep in the refrigerator

If you prefer a sweeter limoncello, you can increase the sugar to 3 cups and decrease the water to 5 1/2
