Sweet and sour cabbage
Friulan recipe



1 tablespoons butter
1 tablespoon extra virgin olive oil
1 onion, sliced
3 ounces lean pancetta, diced
2 ½ pounds green cabbage, washed, cored and sliced
1 Granny Smith apple, peeled, cored and sliced
2 tablespoons red wine vinegar
salt and pepper
¼ cup raisins

In a large skillet heat the butter and oil, add the pancetta and onion and sauté’ till the pancetta is almost crisp and the onion tender.
Add the cabbage and apple and cook gently till they begin to soften.
Add the vinegar and raisins, stir well then add salt and pepper.
Cook for 10-12 minutes.
